Because of its size, variety of topography and altitude, Iran has great extremes of climate and, therefore, the type of agricultural products, depends on the climatic condition of each area.

In the south of Iran, with its typically hot weather condition, the main product is date with a world-famous quality.

One of the Iranian export products is fruit which is on high demand in the neighboring countries, like Russia in the north and also in Europe.

The View of a Farm

Of 163.6 million hectares of the country's total land area, only a mere 11 percent is cultivable. Still 63% have not been used, and given the fact that 18.5 million hectares of the present farms are being used with 50% to 60% capacity, about one-seventh of the total cultivated land is sufficient to meet domestic demand.

Historically pistachios is associated with royalty, perseverance and pride. It dates back to the Holy Lands of the Middle East, where they grew wild in the high desert regions. Today,

It is believed that Stone Age people used pistachio where is now known as Iran and used to be the Persian Empire. It is said that Queen Belgais of Shiba used to serve imperial guests with the finest Iranian pistachio which was only available to the royalties.
At present Iran produces more pistachio than any other country in the world

The other important Agricultural Product is Saffron which is beautiful, delicious, expensive and the best in the world. Khorasan Province, in the North-East of the country is the biggest producer of Saffron and in 1999-2000, it exported 69 tones at the value of $27,800,000. In Khorasan   120 different kinds of Saffron with different tastes and colors can be found.

stigmas of the saffron crocus (Crocus sativus) which flowers in the Fall in many different countries, including Greece, India, Iran and Spain. Saffron is sold in two forms: powder and threads, and each behave very differently in the kitchen.

The higher its coloring strength, the higher its value. Saffron's coloring strength determines its flavor and aroma.
